We decided that we didn’t want to use shrimp but wanted to kick the sweet potatoes up a notch. After some Google Search, we found this recipe for Chorizo & Sweet Potato Poppers.
Our Shopping List:
-6-8 medium sized sweet potatoes
-25 Jalapenos
-1.5llb Chorizo Sausage (Ours was MOSTLY Paleo. It was the Super Bowl OKAY!)
-Up to 2 lbs. of Bacon – figure that you’re going to need 2 pieces of bacon per Jalapeno
-Cilantro for garnish
-Mayo and Sriracha for Garnish – we picked these up from the grocery store, I haven’t ventured into home-made versions but recipes can be found Here and Here
Notes:
– When taking the seeds out of the jalapenos be careful not to touch your face, especially eyes! My fingers were burning for a day afterwards, so you may want to consider gloves.
– We used 1 cookie sheet with a metal rack under the poppers. These took MUCH longer than the poppers that were directly on the foil-covered cookie sheet, but they cooked much more evenly.
-We LOVE garlic, so we put a few tbs of crushed garlic into the chorizo
