Coach Brandon came up with this winning recipe:
Breakfast “Soft Taco”
- Fry up 2-3 eggs in the skillet (cook them as if they were a pancake)
- Once cooked on both sides, fold eggs in half (making an egg soft taco shell)
- Wrap 1-2 pieces of turkey around the egg
- Stuff spinach, guacamole, salsa, and/or cheese in the middle of your “taco”
- Put back in the skillet until turkey is warm and sizzling…
- Enjoy!
