Thursday Recipe: Veggie Spaghetti (Paleo Spaghetti)
Yes, I’m in love again. With cabbage. Cabbage transformed into spaghetti noodles (technically fetuccini or linguini noodles since its wide.) Whatever you call it, it’s good and easy-peasy:
1 cabbage cut lengthwise into thin “slices”
2T coconut oil
Toss cabbage in a wok with coconut oil until soft and noodle-like. Add some kale or spinach if you’ve got it. Season to taste with garlic powder, pepper, salt, etc.
Serve warm or cold. Get creative with your toppings: I’ve tried it both plain or served with a tomato sauce and protein. (I bet an almond butter sauce would also rock.)
