How to you prepare for the week? If you’ve got a crazy workday schedule, we’ve found it’s essential to do the bulk of your meal preps on the weekend. Here’s a run-down of what we made this Sunday morning:
- 2.5 pounds baked chicken breasts
- 2 pounds grass-fed ground beef (cooked as burger patties)
- 2.5 pounds grassfed london broil steak- cooked in a crockpot stew with veggies and broth
- 15 eggs scrambled in coconut oil and grass-fed beef fat
- 2.5 pounds ground turkey cooked with 1# of bacon in tomato sauce (aka- paleo sloppy joes)
- 7 hardboiled eggs
Total of 12.5 pounds of meat and 22 eggs cooked- this took Brandon and I about 2 hours of prep work, including cleaning up afterwards! We now have breakfasts, lunches, and dinners to sustain us thru the week. (Just reheat and throw on a big plate of veggies for a quick healthy meal!)
