Gluten Free Broccoli Fritters Recipe

Cook time: 30 minutes
Ingredients
Makes 10 fritters
- 1 head raw broccoli (florets, not the stems)
- 3 pastured eggs
- 3 Tbsp ground flaxseed
- 2 Tbsp chia seeds
- 1 Tbsp coconut flour
- ½ onion, diced
- 1 tsp garlic
- Handful of parsley
- Salt and pepper to taste
- Coconut oil, to cook
Directions
- Cut raw broccoli into florets.
- Combine all ingredients in blender and pulse to form paste.
- Let batter sit for a few minutes to allow the coconut flour to absorb the liquid.
- Warm coconut oil in a medium frying pan and drop the batter into the pan using a 1/4 cup measure.
- Cook on low heat for a few minutes each side or until golden.
- Serve with cashew cream cheese.
