No Bake Chocolate Peppermint Donuts
Prep time: 15 minutes
Freeze time: 30 minutes
Yield: 6 mini donuts
Ingredients
For the dough:
1 cup raw almonds
1/2 cup Medjool dates (pitted)
1/3 cup raw cacao powder
1 Tablespoon coconut flower nectar
1/4 teaspoon vanilla powder
3 drops peppermint essence
Topping:
melted dark chocolate (optional)
Directions
1. Grind all the ingredients into a thick, moist dough in a high speed blender or food processor.
2. Press into silicone donut mould and put in the freezer until cold and firm, around 30 minutes.
3. Remove donuts from silicone mould and drizzle with melted dark chocolate.
Note: You can use dried dates instead of Medjool dates although dried dates will need soaking (soak in water for around 1 hour).
